THE OLIVE TREE, A MEDITERRANEAN SYMBOL
The whole Mediterranean area is full of olive orchards representing many varieties whose most famous are Tanche, Aglandaou, Picholine, Gariguette, Luque, Grossane and Bouteillan. That is why you'll find many olive products at TASTE OF PROVENCE : - fresh and canned olives - tapenades and olive sauces - extra virgin olive oils from all the producing countries : France; Spain, Italy, la Greece, Tunisia, Portugal, la Crete.
Cropped fully matured (black olives) or "primeur" and then smothered in a flavoured brine (green olive) some have even their A.O.C. (controlled origin) like the Baux de Provence Valley's. On top of the olive oils, the olive is the main ingredient of many spread and sauce like the now very famous black and green olives tapenade made of olive, capers and anchovies.
All this fine specialities have in common to comply with the upper most security food standards (HACCP) and to be originated and processed where the main ingredients grow, the olives.
